  10. Salt and Vision Problems Speaking of salt and your eyes, there is much evidence to implicate salt in causing vision problems. The eyes, after all, are part of your body, and they can be affected by the bloating resulting from salt intake as much as other tissues. When this bloating from salt (edema) occurs in the eye, the alignment of the eye's internal components may be thrown off resulting in errors of refraction. Although surgeon's can correct some of these alignment problems by cutting and flattening the cornea, this does not address the cause of the cornea's swelling (corneal edema), which may result from salt water bloating within the eye. Researchers have induced edema in the cornea of laboratory animals by soaking the removed cornea in a salt solution. Research also showed that cataract formation, a clouding of the lens, was positively associated with salt intake (Cumming, 2000). China, Japan, and other Asian countries have the highest consumption of dietary salt in the world, and these countries also have the highest prevalence of nearsightedness, or myopia. Primitive populations within Africa, Brazil, and other areas with low salt intake do not have high reported rates of myopia. Studies of the traditional hunter/gatherer diet of Eskimos showed that myopia increased in younger generations of Eskimos who began to eat a Western diet, which included more salt. The Journal of the American Medical Association reported back in 1947 that vision improved in patients who followed a low-salt Rice Diet developed by Kempner. The body contains sodium-potassium pumps within most of the cell membranes that help to eliminate excessive amounts of sodium. "In the beginning, Beijing police were protecting us, but their attitude has completely changed," said Cheng Liping, 38, whose husband was on the flight. "I can't fathom why they're doing this. I feel so incredibly disappointed." The Boeing 777 aircraft carrying 239 passengers and crew disappeared on March 8 after taking off from Malaysia's capital, Kuala Lumpur, bound for Beijing. About two-thirds of those on board were from China. Investigators say what little evidence they have suggests the plane was deliberately diverted thousands of kilometres from its scheduled route before plunging into the Indian Ocean. But no one knows for sure, or why. A painstaking international search has failed to find any trace. For the relatives, neither their pain nor their quest for answers has eased, and that seems to have become an annoyance for China's authorities. Police had beaten at least two people whose children were on the flight, several family members said. In one case, a woman in her 50s landed in hospital for three days. "I went to see her in hospital. I could see the injuries on her head and body," said Zhang Yongli, 64, whose daughter was on the flight. "The way the police acted was very extreme, it's wrong to treat us this way." Beijing police did not respond to requests for comment. The government has repeatedly said it would spare no effort in the search and leaders have expressed sympathy for the families. Public security authorities have not commented on the families but Malaysia Airlines said distraught relatives had sometimes been aggressive. Some relatives said they believed their homes were being watched. Police have detained people several times at an office the government has set up in a Beijing suburb where families can go to seek information about the search from Malaysia Airlines and government representatives. Detentions usually lasted for about 24 hours, said the families and their lawyer. Police had cited various reasons, family members said, including a rule against large gatherings. In a couple of cases, children were taken into custody with adult relatives. In at least two other cases, relatives say, police went to family members' homes before dawn to detain them without a reason. "On some level I can understand why the police are doing this - perhaps they're used to only dealing with bad people," said Liu Wanyi, 26, whose husband was on the plane. "But we're not seeking to antagonise the government in any way." In the weeks after the flight disappeared, when media attention was intense, police were a constant presence at the Beijing hotel where the airline put up the families and held daily meetings. But as the story faded from the news, authorities became less supportive, the families say. "Honestly, I can't endure this," Cheng said.   18. Luckily, no food or drug allergies here. A few years ago I was flying Southwest when the flight attendants had to suspend snack service, as it turned out that one passengers was allergic to peanuts. I wasn't aware that a food allergy would cause such drastic measures. What do you do when peanuts are served on your flight, BabyBoomer?

  21. LIVE STRONG, LIVE HEALTHY. Is peanut butter really good for you, or is it just another fat-rich processed food? The answer depends on which brand you buy. By Janey Macleod Vegetarians, vegans and folk on a dairy-free diet appreciate the value of peanut butter. As well as being a tasty alternative to dairy butter and cheese, it's a versatile cooking ingredient in its own right (see, for example, our West African Peanut Stew). More importantly, it's very beneficial nutrition-wise. Peanut butter contains around 30 percent protein, and is also a worthwhile source of iron, niacin (vitamin B3) and fiber. But not all brands of peanut butter are equally healthy. In fact, many contain undesirable additives that do more harm than good. So before you buy your next jar, be sure to check the ingredients. Avoid the additives The worst offender is palm oil, a cheap oil that's added to peanut butter to prevent the natural oil from separating out. Unfortunately, palm oil is high in saturated fats. Brands that use palm oil contain 16 to 20 percent more saturated fats than those that don't. As an alternative to palm oil, some brands contain mono- and di-glycerides of fatty acids, also known as glyceryl monostearate or distearate, or E471. This is used as an artificial stabilizer. These brands are also high in saturates. Sugar is another common additive, though it's often disguised on the label as dextrose, sucrose or fructose. Sugar adds to the calorie count of the product without any nutritional benefit. Of course, it's also a factor in causing many undesirable conditions, from obesity to dental decay. The 'natural' option http://www.veg-world.com/adverts/peanut-butter.jpg If you want to avoid these and other additives, look for a brand of peanut butter that contains peanuts and nothing else - or, at the very worst, small quantities of added salt. Although too much salt can lead to high blood pressure, small amounts are safe. A sodium rating less than 0.4 grams per 100 grams is acceptable (this is equivalent to about one sixth of a gram of salt per generous serving of peanut butter); anything higher is not. Fortunately, there are several brands of peanut butter on the market that are completely free of additives. Typically described as 'natural' peanut butters, they include Meridian (available in Europe and Australia), and Food Mill, Natural Value and Maranatha (in the US). These and other natural brands can be found in health food stores as well as larger supermarkets. You can also order them on line, for example you can now buy The Peanut Shop's products (see photo) from Amazon.Com, or those from the Peanut Butter & Co at Amazon in the UK. But while these additive-free brands are healthier than their mass-market competitors, they are still high in fat. Even without any added palm oil or stabilizers, peanut butter contains around 42% fat with about 8% saturates. But that compares very favorably with dairy butter (34% saturates) and hard cheeses (around 21% saturates). Disadvantages The main disadvantage of the additive-free brands is that, because they contain no emulsifiers, the natural peanut oil tends to separate out. But that's not really a problem, as it's easy to stir it back in. It's even possible to buy a special mixing gadget for stirring in the oil. It does nothing that you can't do almost as easily with a tablespoon, although it does tend to reduce spillage and mess.
